Corn Relish

For 6 pints:

I.5 dozen ears of corn, cut kernels from cob

1 very small head of cabbage (for 1 quart chopped cabbage)

1 cup chopped red pepper

1 cup chopped green pepper

1 cup chopped onion

1 T celery seed

1 T salt

1 T turmeric

2 T dry mustard

1 T mustard seed

1 cup water

1 quart vinegar

1 to 2 cups sugar

Combine all ingredients.  Bring to a boil and simmer 20 minutes.  Bring to a boil and pack into sterilized jars leaving 1/2 inch head space.  Wipe rim. Center hot lid on jar. Apply band and adjust until fit is fingertip tight.  PROCESS filled jars in a boiling water canner for 15 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed
