Herb Roasted Potatoes

ImageHERB ROASTED POTATOES  

  • 1 ½ – 2 # red potatoes, washed & scrubbed, dried & cut in 1” chunks
  • ¼ cup olive oil
  • 6 cloves garlic, diced
  • 2 T fresh rosemary
  • 2 T fresh thyme (optional)
  • 1 tsp. salt
  • ¼ tsp freshly ground black pepper (optional)

 

Directions:

  1.  Preheat oven to 400 degrees F.  
  2.  Combine all ingredients in a large bowl & toss well.  
  3.  Arrange potatoes in a single layer on a baking sheet.
  4.  Roast, turning occasionally, until lightly browned & tender, about 30 minutes.
