Veggie Slaw with Sesame Vinaigrette
1/2 head of cabbage – sliced
1.5 cups of snap peas – stems removed and sliced
2 spring onions – halved and sliced
Combine in large bowl.
6 tablespoons rice vinegar
3 tablespoons olive oil or other vege oil
1 tablespoon sesame oil
1 tablespoon sugar
Mix together. Pour over veggies. Add salt and pepper to taste. Feel free to substitute other veggies like scallions instead of spring onions or add some grated carrots. I’ve had similar salads with toasted sliced almonds – fresh parsley – have fun!
