Zucchini and Carrot Risotto


It is just the beginning of Zucchini season.  It also means that it is time to think outside of the box.  Zucchini (and all summer squash for that matter) can be used for so much more than Zucchini bread.  (Not that everyone doesn’t like a slice of their mom’s traditional recipe)

We would love to hear your favorite zucchini recipes.  Please share them with us!

Here is the recipe we tried.

* A wonderful member suggested a version of this recipe, as per her version we used cumin during the sauteing of the onions.  This recipe calls for saffron…we quite liked the cumin substitute, but it is up to you.  Let us know how it turns out!
